Australia Day and Music !!

Whats so special about Australia day, and what has this got to do with music?. Well Australia day is our birthday and if you click the link on the picture below, you will see how we celebrate and why its the Ozzie's major day and how it compares to other countries.

Oztralia day

Kangaroo or Emu Burgers

1kg Kangaroo or Emu saddle

2 teaspoons cracked black pepper

1 teaspoon freshly ground native pepperleaf

1 teaspoon salt

1 small onion, chopped and fried

1/2 clove garlic, crushed and fried

1 chicken egg

The red meats can be marinated in about 500ml of red wine for added richness of flavour. Coursely mince the meat and mix in the remaining ingredients adding the egg to bind the mixture. Extra seasoning can be added to taste. Pan fry in macadamia nut oil and serve fried onions seasoned with ground bush tomatoes.

can be served with bread rolls, burrawong bread or damper

EEL SPREAD

1 cup chopped smoked eel

Half carton low fat sour cream

1 cup wholemeal breadcrumbs

Combine all ingredients in a food processor and blend to a smooth paste.

Serve on bread fingers or biscuits
